These easy homemade Vegan Sweet Potato Tortillas are great just by themselves, but also to use as a base for tacos, burritos, quesadillas, and, nachos, or as a holder for leftover vegetable stews and curries.
The vegan sweet potato tortillas are yeast, sugar and, oil free. And made with only 2 ingredients, and I need to say that the first time I did them I ate all the tortillas myself in just one go.
- 1 cup sweet potato (cooked and mashed) (~2 medium potatoes)
- 1 cup wholemeal flour
- a pinch sea salt
Steam or boil the sweet potatoes until tender. Then mash the potatoes (without water), add the flour and salt, while they’re still hot.
Using your hands or a food processor combine well and knead to form a soft and elastic dough.
Create a log with the dough and cut small portions (approx. 10). Dust your hands with flour, roll the dough in your hand and then flatten it so they resemble tortillas.
Heat a non-stick skillet over medium-high heat.
Place each tortilla on the skillet and let it cook for approximately a minute or until it bubbles up. Then flip it over to cook on the other side.
Stack the cooked flatbreads on a plate as you go, and cover with a clean kitchen towel to keep warm.
??tips:
- They can be made gluten-free with chickpea flour or rice flour, but any flour will work for this recipe.
- Add more flour to adjust the consistency.
- Works fine with a mix of sweet and normal potatoes.
- Add extra flavor with, sesame seeds dried garlic and onion flakes.

- sal a gosto
