Vegan Saffron Risotto with Baked Tomatoes (risoto de açafrão com tomate assado)

IMG_5380This Vegan Saffron Risotto with Baked Tomatoes it’s creamy, healthy and really delicious. Don’t be intimidated to try it, because It’s really quite simple.
Vegan risotto is one of my favorite foods.

  • 1 small onion
  • 4 garlic cloves
  • 8 vine tomatoes
  • ½ tsp saffron
  • 175 grams arborio rice
  • ~150g fresh peas (if frozen boil first)
  • vegan parmesan to taste
  • thyme  to taste
  • Oregano to taste
  • salt and pepper to taste
  • parsley to taste

Preheat the oven to 180°C.

Saffron Risotto

Pour 750ml of water into a large saucepan, with the saffron powder and salt and bring to boil.

Peel and chop the onion and the garlic.

In a large saucepan heat a splash of olive oil on medium heat, and add the onion and garlic. Cook, stirring, until soft. Strip the thyme leaves from their stalks and stir in the thyme and oregano.

Mix in the rice and make sure it is well coated in the oil.

Add small amounts of the water to the rice and stir until almost absorbed. Repeat this process until all of the water has been absorbed.  Stir in the peas for the last 5 mins of cooking.

Stir some parmesan cheese through the finished risotto.

Serve with parsley and cheese on top.

Baked Tomatoes

Halve the tomatoes and put them on a lined baking tray, cut side up. Sprinkle with oregano, parmesan, black pepper and drizzle with a little olive oil.

Put the tomatoes on the top shelf of the oven, for about 15-18 mins, or until they  are tender

Serve the tomatoes on top of the risotto.

?Tips: Taste as you go, and add more water if you need.

It’s very important that you use a good quality saffron.

  • 1 cebola pequena
  • 4 dentes de alho
  • 8 tomates de videira
  • ½ c. de chá de açafrão
  • 175g de arroz arbório
  • ~ 150g de ervilhas frescas (se forem congeladas ferver primeiro)
  • queijo parmesão vegano a gosto
  • tomilho a gosto
  • orégãos a gosto
  • Sal e pimenta a gosto
  • salsa a gosto

Pré-aquecer o forno a 180°C.

Risoto de açafrão

Colocar 750ml de água numa panela grande, com o açafrão e sal e deixar ferver.

Descascar e picar a cebola e o alho.

Numa panela grande aquecer um fio de azeite em lume médio. Juntar a cebola e o alho. Cozinhar, mexendo até ficar macio. Retire as folhas de tomilho de seus talos e misture o tomilho e os orégãos na cebola e alho.

Adicionar o arroz e mexer bem para que fique coberto com o azeite.

Adicionar pequenas quantidades de água ao arroz e ir mexendo enquanto ele absorve a água. Repetir este processo até que toda a água tenha sido absorvida. Adicionar as ervilhas nos últimos 5 minutos de cozimento.

Adicionar  queijo parmesão ao risoto, mexer e provar. quando estiver no ponto,  servir com salsa e queijo por cima.

Tomate Assado

Cortar os tomates ao meio e colocá-los num tabuleiro de ir ao forno com o lado cortado para cima. Polvilhar com orégão, parmesão, pimenta preta e regar com um pouco de azeite.

colocar os tomates na prateleira de cima do forno até o concurso 15-18 minutos.

Servir os tomates em cima do risoto.

?Dicas: Ir provado e adicionar mais água se necessário.

É bastante importante que o açafrão seja de boa qualidade.
