Vegan Leek Risotto with Rum (Risoto de alho frances vegan com Rum)

This recipe will change the way you look at risotto because is so ridiculously simple, creamy and tasty.

  • 2 tablespoons olive oil
  • 1 large leek, sliced thinly
  • 2 onions, sliced
  • 1 cup of rum (or any other alcoholic drink like prosecco, white wine, etc)
  • 1 cup risotto rice  (+-250g)
  • 3 Tbsp nutricional yeast
  • Water (or homemade vegetable broth)
  • Salt and pepper to taste

Slice the leek and the onions and cook over medium heat with the olive oil. When soft start adding the rum and stir.

Add the rice and keep stirring. Slowly start adding small amounts of water (1/2 to 1cup) never stop stirring. When the rice is cooked add the salt, fresh cracked pepper, and the nutricional yeast.

Esta receita vai mudar a forma como  vês o risoto,  porque é ridiculamente simples, cremoso e uma delicia.

  • 2 c. de sopa de azeite
  • 1 alho-francês (alho-porro) grande, cortado finamente às rodelas
  • 2 cebolas, cortadas finamente
  • 1 caneca de rum (ou qualquer outra bebida alcoólica como vinho branco, etc.)
  • 1 caneca de risoto (+-250g)
  • 3 c. de sopa Levedura nutricional
  • Água (ou caldo caseiro de vegetais)
  • Sal e pimenta a gosto

Cortar o alho-francês e as cebolas e saltear em lume médio/brando com o azeite. Quando estiverem macias e mais transparentes começar a adicionar o rum aos poucos e ir mexendo.

Adicionar depois o arroz e continuar a mexer. Começar lentamente a adicionar pequenas quantidades de água (1/2 – 1 caneca), sem nunca parar de mexer. Quando o arroz estiver cozido adicionar o sal, a pimenta moída de fresco e a levedura nutricional.

Neste caso servi com beterraba picada por cima.

    I LOVE LEEKS! I make risotto for my family a LOT! Oh and I am a huge fan of Rum/Ron! I can not wait to try this recipe.

    Red wine is nice if you’re using mushrooms. Can’t remember how good the beer was tbh but I guess it depends on the style of beer you use 🙂

    Interesting. For risotto, I’ve used white wine, red wine, and even beer. But rum is a bold choice!

      😉 if you don’t have rum will work just fine with white wine 🙂 I think I will give beer a go, never tried with risotto
