Vegan chia mousse with date caramel, and chocolate (mousse vegana de chia, com chocolate e caramelo)

This vegan chia mousse with date caramel and melted chocolate combines layers of flavour and is easy and quick to make.

  • 1/2 cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 1 + 1/2 cup vegetal milk
  • 2 tablespoons any nut butter 
  • dark chocolate (to melt) 
  • date caramel 
  • 1/4 cup sugar (or any liquid sweetener)

Place the chia seeds into a blender and blend in high-speed until powdered.

Add the other ingredients to the ground chia and blend on high speed until you have a great smooth texture.

Adjust sweetness and texture if needed. Transfer the mousse into serving cups, and prepare the melted chocolate and the caramel.

Place chocolate and some drops of any vegetal milk in a microwavable bowl. Heat on high for 30 seconds, stir. Continue heating in 10 – 20  seconds, stirring after each heating until melted (don’t overheat chocolate)

Serve with caramel and melted chocolate on top.

Store in the fridge in an airtight container up to 4 days.
  • 1/2 caneca de sementes de chia
  • 2 colheres de sopa de cacau em pó
  • 1 + 1/2 caneca de leite vegetal
  • 2 colheres de sopa de uma qualquer manteiga de frutos secos
  • caramelo de tâmaras 
  • chocolate preto (para derreter)
  • 1/4 caneca de açúcar (ou um qualquer adoçante líquido)

Colocar as sementes de chia num liquidificador e triturar completamente as sementes até que fiquem em pó.

Adicionar todos os ingredientes à chia em pó e triturar tudo no liquidificador até se obter uma textura cremosa.

Ajustar o doce e a textura caso necessário. Colocar a mousse em tacinhas. Preparar o caramelo e derreter o chocolate. 

Colocar o chocolate e algumas gotas de um qualquer leite vegetal numa tigela para microondas. Aquecer em potência média-máxima por 30 segundos e mexer.

Continuar a aquecer por 10 – 20 segundos, e ir mexendo sempre até que o chocolate esteja derretido (não aquecer demasiado o chocolate)

Decorar a mousse com caramelo e chocolate derretido.
Dá para guardar no frigorifico por até 4 dia.
