Roasted Orange Vegetables

This is a mixture of squash, carrots and sweet potatoes roasted in the oven, tossed in a maple syrup glaze.

  • 1 聽small聽butternut squash, seeded peeled and cut into 1-inch pieces
  • 2 carrots, peeled and cut into 1-inch pieces
  • 2 sweet potatoes, peeled and cut into 1-inch pieces
  • 2tbsp olive oil
  • 2聽tbsp maple syrup
  • salt and pepper to taste
  • 3聽tbsp fresh coriander
  • 1/2聽tbsp cumin seeds
  • 1/2tsp ground cinnamon (optional)

Preheat your oven to 200潞C. Mix together the olive oil, syrup and cumin seeds in a small bowl. (Add the cinnamon at this point if you want a more exotic flavour)

Spread the vegetables out on the oven tray聽in a single layer.聽Drizzle the olive oil mixture over the top, use your hands to toss the vegetables around to evenly coat. Season to taste with salt and pepper.

Roast for 40 minutes or until vegetables are tender and starting to caramelize. Sprinkle with coriander finely chopped.

Esta 茅 uma mistura de ab贸bora, cenouras e batatas-doces assadas no forno com xarope de ac茅r.

  • 1聽ab贸bora pequena, sem sementes, descascadas e cortadas em聽cubos de 1cm
  • 2cenouras, descascadas e cortadas em cubos de 1cm
  • 2 聽batatas-doces, descascadas e cortadas em cubos de 1cm
  • 2c. sopa de azeite
  • 2 c. sopa de xarope de ac茅r
  • Sal e pimenta a gosto
  • 3 c. sopa de coentros fresco
  • 1/2colher de sopa de sementes de cominho
  • 1/2 colher de ch谩 de canela em p贸 (opcional)

Pr茅-aquecer o forno a 200C. Misturar o azeite, o xarope de ac茅r e as sementes de cominho numa聽tigela pequena. (Adicione a canela neste momento, para um toque聽mais ex贸tico).

Espalhar os legumes no tabuleiro numa聽煤nica camada. Regar com a mistura de azeite por cimas envolver com as m茫os. Temperar a gosto com sal e pimenta.

Assar por 40 minutos ou at茅 que os vegetais estejam macios e comecem a caramelizar. Polvilhe com coentros finamente cortados.

Vegan Roasted butternut squash Pizza (Pizza vegana de ab贸bora)

Delicious homemade Vegan Pizza with Roasted butternut squash
  • 1pound/500g pizza dough (homemade or store-bought)
  • 1 cup tomato sauce (homemade or store-bought)
  • 1cup vegan mozzarella cheese or聽cream cheese聽
  • 2 cups peeled and diced butternut squash
  • 2tbsp olive oil + 1
  • 1 red onion聽sliced聽
  • salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 cup white mushrooms, sliced
  • 2 rosemary sprigs

Preheat the oven to 200C.

Toss the butternut squash and the onion in 2 tablespoons of the olive oil and spread on a baking sheet. Season with salt and pepper. Roast it until tender about 25 minutes.

Prepare the聽dough into any shape and size you want.

The dough should be fairly thin. Rub a bit of olive oil and garlic over the pizza dough add a thin layer of tomato sauce, then the cheese followed by the roasted butternut squash, onions and the mushrooms.

Bake until the crust is light golden brown 8-10 minutes. Remove from oven and sprinkled on top some rosemary sprigs.

PT: Pizza vegana de ab贸bora
  • 500g de massa de pizza (caseira ou comprada )
  • 1caneca de molho de tomate (caseira ou comprada)
  • 1 caneca de queijo mozzarella vegano聽ou聽queijo cremoso
  • 2 canecas de ab贸bora descascada e cortada aos cubinhos
  • 2colheres de sopa de azeite + 1
  • 1 cebola roxa fatiada
  • Sal e pimenta a gosto
  • 2 dentes de alho picados
  • 1 caneca de cogumelos brancos, fatiados
  • 2 raminhos de alecrim

Pr茅-aquecer o forno a 200掳C.

Envolver a ab贸bora e a cebola em 2 colheres de sopa de azeite e colocar 聽numa assadeira. Temperar com sal e pimenta. Assar por cerca de 25 minutos.

Preparar a massa da pizza na forma e tamanho desejado.

A massa deve ser bastante fina. Esfregar um pouco de azeite e alho sobre a massa da pizza, adicionar uma camada fina de molho de tomate, depois o queijo seguido da ab贸bora assada, cebola e cogumelos.

Levar ao forno at茅 que a crosta esteja dourada, ~ 8 a 10 minutos. Retirar do forno e adicionar uns raminhos de alecrim.

Roasted Butternut Squash with Chickpeas (abobora no forno com gr茫o de bico salteado)

  • 1 butternut squash, seeds removed
  • 2/3 cup of dried聽chickpeas (or聽one聽can)
  • 8 or 9 spring onions, finely chopped
  • 4 mini sweet peppers,聽finely聽sliced
  • 2 Tbsp extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • herbs and spices to taste (optional)

Preheat oven to 200潞C, cut the聽squash into halves and sprinkle lightly with salt and pepper. Put the 2 halves in the oven for 30聽minutes, or until tender but slightly firm when tested with a fork.

Meanwhile, heat the olive oil in the wok,聽add the spring onions and the sweet peppers, and saut茅 over medium-low heat, stirring often, until softened.聽Season with sea salt and pepper and other herbs and spices that you fancy. (Personally, I use them a lot).

Fold in the聽chickpeas, and gently stir-fry over medium heat just to mix and warm the chickpeas. Remove from heat and add the sweet peppers.

NOTES, if you are cooking dried chickpeas,聽soak them for at least 12 hours,聽and cook slowly.

1 cup of dried chickpeas yields about 4 cups of cooked chickpeas

PT:

  • 1 ab贸bora,聽partida a meio sem sementes.
  • 2/3 caneca聽de gr茫o de bico seco (ou uma lata)
  • 8 ou 9 ramos de cebolinho聽picado
  • 4 mini聽pimentos doces
  • 2 c. sopa de azeite
  • Sal e pimenta preta mo铆da na hora (a gosto)
  • ervas e especiarias聽a gosto (opcional)

Preaquecer o forno a 200潞C, cortar a ab贸bora a meio e聽聽polvilhar聽levemente com sal e pimenta. Assar no centro do forno por 30 minutos, ou at茅 estar macia, mas ligeiramente firme.

Entretanto聽aquecer o azeite no wok, adicione o cebolinho e os pimentos聽e refogar em lume m茅dio-baixo, mexendo sempre, at茅 que fiquem moles. Temperar com sal e pimenta e outras ervas e especiarias a gosto聽(Pessoalmente, eu uso e abuso das especiarias).
Acrescentar聽o gr茫o de bico, e refogar聽em聽lume m茅dio at茅 que ganhe algum sabor. Retirar do lume e adicionar os pimentos cortados finamente.
