Soy milk it’s not my favourite vegetal milk because takes a bit longer than the other ones, but I still do it to do tofu.
- 120g soy beans, soaked over night/day
- 1l of water
Start by soaking the soybeans over night. Then rinse them well and blend the beans with the water for about 30 seconds to a minute. Put the mixture in a pan and let it cook over medium/low for about 20 – 30 minutes. Make sure you keep stirring so that it does not stick to the bottom of the pot.
Using a cheese cloth or nut bag, strain the milk into a big pot or bowl. Squeezing the cloth until you can extract most of the liquid. Let it cool and store in fridge for about 4 days.
If you want a more liquid milk just add some water.
What about the leftover bean pulp (okara)?
The okara is nutricional rich and a shame to wast. You can use it as part of any recipe that has flour like pancakes. This blog has great recipes with okara http://okaraproject.blogspot.co.uk

O Leite de soja não é o meu leite vegetal favorito porque leva um pouco mais de tempo a preparar que os outros leites, mas ainda assim faço-o para fazer tofu.
- 120g de feijão de soja, demolhado durante a noite /dia
- 1l de água
Começar por demolhar a soja durante a noite. No dia seguinte escorrer, lavar e colocar os grão num processador/liquidificador com a água. Triturar por 30 segundos a um 1min.
Colocar a mistura num tacho e deixar cozinhar em lume médio/baixo por cerca de 20 – 30 minutos. Mexer com alguma regularidade para que não cole no fundo.
Coar com um pano e colocar o leite vegetal num frasco de vidro e deixar arrefecer. Guardar no frigorifico por 4 dias.
Para obter um leite mais líquido adicionar um pouco mais de água.
O que fazer com a polpa do feijão (okara)?

As you may have seen on my blog, before using my chickpea milk to make cheesecake, I used the chickpea pulp to make some falafels. I wonder if okara could be used the same way! I once made some okara burgers using store-bought okara, but I should definitely make my own okara at home next time. That way, I’ll have the soy milk to enjoy as well. Thanks for the great idea!
