How to make the best hummus
- 1 can chickpeas (drained and rinsed) or 1+ 1/2 cups cooked
- 4 tablespoons tahini (sesame paste)
- 1/4 cup water or olive oil
- 1 teaspoon garlic powder or 1 clove of garlic
- juice of 1/2 or 1 lemon, to taste
- 1/2 – 1 teaspoon cumin
- salt to taste
- 1 tablespoon paprika or chilli (optional)
*Use canned chickpeas or cook them in boiling water
Place all the ingredients (except paprika) in a blender and blend until smooth. Taste for flavour and adjust to taste the garlic, lemon, salt and cumin.
If the hummus is quite thick, add more water (or olive oil).
Add paprika, serve and enjoy with vegetables, pita, crackers, chips, or slathered on sandwiches or wraps.
Leftovers will keep well in a sealed container in the fridge for up to 5 days.
*Alternately, use olive oil, instead of tahini.

Como fazer um hummus perfeito
1 lata de grão de bico (escorrido e enxaguado) ou 1+ 1/2 xícaras cozidas
4 colheres de sopa de tahine (pasta de gergelim)
1/4 xícara de água ou azeite
1 colher de chá de alho em pó ou 1 dente de alho
suco de 1/2 ou 1 limão, a gosto
1/2 – 1 colher de chá de cominho
sal a gosto
1 colher de sopa de pimentão ou pimentão (opcional)
* Use grão de bico enlatado ou cozinhe em água fervente
Coloque todos os ingredientes (exceto páprica) no liquidificador e bata até ficar homogêneo. Prove o sabor e ajuste o sabor do alho, limão, sal e cominho.
Se o homus for bem grosso, adicione mais água (ou azeite de oliva).
Adicione páprica, sirva e desfrute com legumes, pita, bolachas, batatas fritas ou slathered em sanduíches ou wraps.
As sobras ficarão bem em um recipiente fechado na geladeira por até 5 dias.
* Como alternativa, use azeite, em vez de tahine.

Keeping this for sometime when we have a full kitchen. Here in Christchurch, Life Health Foods makes Greater Hummmus product of hummus and butternut squash. I find a dollop over spaghetti and tomato sauce is a good substitute for cheese. Cheers.
